INGREDIENTS
- 1 (12oz) pkg Rita’s Garden Broccoli Rice
- ½ tablespoon extra-virgin olive oil
- 2 ea. scallion stalks finely sliced
- 1 garlic clove minced
- 2 tablespoons chopped cilantro
- ¼ teaspoon sea salt more to taste
- Freshly ground black pepper to taste
- 1 ea. lime juice and zest
DIRECTIONS
- Heat olive oil in a skillet over medium heat and add broccoli rice, scallions, garlic, chopped cilantro, salt and pepper.
- Cook and stir for 1 minute until lightly warmed but still bright green.
- Remove the pan from the heat and stir in cumin lime zest and lime juice
- Taste and add more salt and pepper if needed. Serve
