Ingredients
- 3 ½ cups vegetable stock
- 18 oz swaxy potatoes (peeled and diced)
- 2 red peppers (diced)
- 1 onion (diced)
- 2 zucchini (sliced)
- 4 tomatoes (peeled and chopped)
- 2 cups sliced mushrooms
- 2 tbsps. fresh herbs (thyme, oregano, parsley, chopped)
Preparation steps
- Bring the stock to the boil and add the potatoes.
- After 10 minutes add the peppers and the onion.
- After a further 10 minutes add the courgette, tomatoes and mushrooms. Simmer for 5-10 minutes.
- Finally add the herbs and season with salt and ground black pepper.
