INGREDIENTS
- 1 (12 oz) pkg Rita’s Vegetable Primavera mix
- 5 oz dry penne pasta
- 1 tablespoon olive oil
- 2 teaspoon chopped garlic
- ½ cup grape tomatoes cut in ½
- 1 tsp dried Italian seasoning
- ¼ cup vegetable stock or pasta water
- 1 tablespoon fresh lemon juice
- ¼ cup shredded parmesan divided
- 1 tablespoon chopped fresh parsley
DIRECTIONS
- Bring a medium pot of water to a boil. Cook penne pasta in salted water according to package directions, reserve ¼ cup of pasta water if not using stock.
- Meanwhile heat olive oil in a 12-inch-deep skillet over medium-high heat.
- Add chopped garlic and Rita’s Vegetable Primavera mix and cook 2 minutes add vegetable stock and cook aprox 3 more min till vegetables are tender.
- Add grape tomato halves and Italian seasoning and cook 1 more minute.
- Add drained pasta, lemon juice, season with salt/pepper, add half the parmesan and parsley. Toss well and serve with remaining cheese sprinkled on the top.
