Roasted Fall Medley

INGREDIENTS

  • 1 (24 oz) pkg Rita’s Garden Fall Medley
  • Half small red onion
  • 1 tablespoon olive oil
  • ½ teaspoon kosher or sea salt
  • Pinch black pepper
  • 2 tsp coarsely chopped rosemary

DIRECTIONS

  1. Arrange a rack in the middle of the over and pre heat to 425 degrees
  2. Cut the onion into approx. 1” chunks and add to a rimmed baking sheet, add Rita’s Garden Fall Medley olive oil and salt/pepper and toss to coat.
  3. Roast for 30 minutes.
  4. Remove the baking sheet from oven and sprinkle with chopped rosemary, toss to combine.  Place back in oven and continue to roast until vegetable are tender and caramelized. Aprox 10-15 min more.
