INGREDIENTS
- 1 (24 oz) pkg Rita’s Garden Fall Medley
- Half small red onion
- 1 tablespoon olive oil
- ½ teaspoon kosher or sea salt
- Pinch black pepper
- 2 tsp coarsely chopped rosemary
DIRECTIONS
- Arrange a rack in the middle of the over and pre heat to 425 degrees
- Cut the onion into approx. 1” chunks and add to a rimmed baking sheet, add Rita’s Garden Fall Medley olive oil and salt/pepper and toss to coat.
- Roast for 30 minutes.
- Remove the baking sheet from oven and sprinkle with chopped rosemary, toss to combine. Place back in oven and continue to roast until vegetable are tender and caramelized. Aprox 10-15 min more.
