INGREDIENTS
- 1 (12 oz) pkg Rita’s Garden Zucchini & Yellow Squash Noodle mix
- 1 cup halved cherry or grape tomato
- 3 tablespoon extra-virgin olive oil (EVOO)
- ¼ cup chopped basil
- 2 tablespoon fresh lemon juice
- ½ teaspoon sea salt
- ½ teaspoon freshly ground black pepper
- ¼ cup freshly grated parmesan cheese
DIRECTIONS
- In a medium sized bowl combine EVOO, lemon juice, salt, pepper, basil and wisk together
- Add vegetable noodle mix and tomatoes. Mix well
- Top with parmesan cheese and serve
