INGREDIENTS
- 1 (16 oz) pkg Ritas Zucchini and Summer Coin Cut
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon chopped garlic
- ½ cup chopped tomato
- 1 tablespoon sliced basil fresh
- Salt and pepper to taste
DIRECTIONS
- In a medium skillet heat on med-high heat
- Add oil and Ritas Zucchini and Summer Coin Cut and cook tossing frequently for 3 minutes.
- Add chopped garlic and cook for 1 minute then add tomato and fresh basil.
- Continue cooking for another 1 minute more until desired softness and season with salt and pepper to taste.
